My New Favorite Food :)
Of course I've heard of spaghetti squash. I've just never tried it.
As a self-proclaimed pasta enthusiast, I really didn't think I wanted to substitute pasta with a vegetable. It sounds ridiculous. But here is what happened...
A while back, I swapped our regular Barilla pasta for Banza chickpea pasta. It was pretty good. Chickpea pasta has about 50% more protein, a lot more fiber, and less carbs than the basic pasta I was eating. It's kind of gritty, but with all of the added benefits, I went about my way making adult decisions.
Y'all though. I decided to give spaghetti squash a try. If you haven't yet. Do it!
Super low calories. One cup is about 30 calories, less than one gram of fat, and seven grams of carbs. It lacks in the protein department, but I added ground turkey meatballs and low-sugar pasta sauce. Perfect! The switch is worth it for the micronutrients too: Iron, B6, Magnesium, Calcium, and Calcium.
